Growing up, he learned the art of Greek cooking from his mother and started working in the family business at 13.Knowing early on that he wanted to cook, Katsanevas attended Salt Lake Community College’s Culinary Institute, where he honed his skills under tough but supportive mentors. After gaining experience at Fleming’s, Smith’s Bistro, and Caffe Niche, he opened Manoli’s in 2015, bringing a fresh take on Greek cuisine with a focus on local, seasonal ingredients. His work has earned recognition from Zagat, Time magazine, and numerous local publications.
