Smashed Squirrel Potatoes

A new concoction came to mind when trying to decide what to do with our plethora of 16 squirrels, and boy did it turn out great! With advice from esteemed squirrel hunter and mentor, Kevin Murphy, we decided on this recipe.

Ingredients:

  • 5 squirrel quarters
  • 1 stick unsalted butter
  • Salt, pepper, minced garlic (the holy trinity of seasoning!)
  • Lemon pepper
  • Thyme
  • 8oz instant roasted garlic mashed potatoes
  • 2 cans Cream of Mushroom soup

Instructions:

In a Dutch oven, add the squirrel quarters, butter, salt, pepper, minced garlic, lemon pepper, and thyme. Measure the seasonings to taste. Bake for 350 degrees for an hour. After an hour, turn it down to 225 degrees until each piece can be easily poked with a fork. When cooled, pull meat from the bone. 

Cook 8oz of roasted garlic mashed potatoes (a college delicacy) by instructions and heat up two small cans of cream of mushroom soup to be used as gravy!

Combine ingredients to your desire and enjoy this flavor-packed meal from one of our most prevalent game species!
